Pina Colada Cake


To continue with our Pineapple Party, we have a delicious summer dessert for you today. Here's Danielle to show you just how easy and quickly this cake comes together:

This Pina Colada Cake is easy peasy lemon squeezy. The hardest part is finding the cream of coconut at the grocery store. Look near the mixed drink items.
Ok, I lied...I actually think the hardest part of making this cake is waiting for it to chill in the refrigerator. Once the cake is all assembled, you can eat it right away...but I TOTALLY recommend letting it chill. A cold pina colada cake is the perfect summer dessert. 

Pina Colada Cake

    • 1 yellow cake mix (baked as directed on package)
    • 1 can sweetened condensed milk
    • 1 can cream of coconut (found by the mixed drink items)
    • 1 can crushed pineapple, drained
    • 8 oz. cool whip
    • shredded coconut (optional)
      1. Bake 1 yellow cake mix as directed on package. When cool, use the end of a wooden spoon and poke holes all over the cake.
      2. Combine cans of sweetened condensed milk and cream of coconut together and pour over cake.
      3. Put can of drained crushed pineapple on top of cake.
      4. Frost with 8 oz. cool whip on top. If desired, add shredded coconut on top.
      5. Chill in refrigerator and enjoy a cool summer treat!
